Trudy is my sister-in-law and most generously gave me this cookie recipe to add to my web site. Over the years I have eaten more than my share of her delicious pumpkin chocolate chip cookies. Trudy is a beautiful woman not only in the kitchen, but just about anywhere else in the house. Not only is she beautiful to look at, but also she has an inner beauty that lets you feel comfortable when you are around her. My brother might get a little suspicious about my relationship with his wife after reading this, but I’m really just in love with her cookies. Or maybe it is just the memories of the heady aroma of those exceptionally delicious pumpkin chocolate chip cookies. Needless to say she is an exceptional baker and cook. Trudy likes to experiment with recipes she finds in the media and she always makes them her own by changing them around a bit.
Trudy’s pumpkin chocolate chip cookies are the most popular cookies on our web site. I’m not crazy about pumpkin, but these cookies are so good they make you forget that you are eating a large squash like plant. As you can tell by my comment, I’m not crazy about any plant in the squash family. Don’t get me wrong I’m not a total Freddie Fooie; I like vegetables as long as they are kept raw.
These cookies are delightful. They are light and fluffy with a very aromatic flavor. The chocolate chips give it that sweet chocolaty taste that can make even fruitcake taste delicious. Yes, chocolate chips can make just about anything taste better.
So for the health conscience, these cookies not only take care of your chocolate cravings, but also take care some of your daily vegetable allowance. The next time your kids turn up their nose at brussels sprouts, sprinkle a good dose of chocolate chips on them. OK I’m just pulling your leg here, but just think of the possibilities.
The next time you can’t decide. Should I be health conscience by eating vegetables? Should I be pitifully bad and eat chocolate? My answer to this age-old question is to whip up a batch of pumpkin chocolate chip cookies. This way you can feel really good about being really bad.
