Hi Chocolate lovers...here is a great chocolate fudge recipe that has come down through my family for generations...
Nana’s Special Chocolate Fudge Recipe
½ Cup full cream milk
2 Cups Sugar
25 Grams (just over 1 oz) Butter
1 Tablespoon of Baking Cocoa
¼ Teaspoon Vanilla Essence
Put milk, sugar, butter and Cocoa into a large heavy saucepan. (sugar rises as it boils.) Make sure all sugar is fully dissolved on low heat, prior to boiling, otherwise the finished product will be grainy. Bring to boil, stirring only occasionally, until soft ball stage (to test, drop a blob into cold water, soft ball means that it can be flattened out on removal from the water) Cool 5 minutes, add Vanilla essence then beat until mixture thickens and loses its gloss. Pour immediately into buttered dish. Mark, and then cut into squares when set.

A Dr James Baker (a Harvard man) and a Mr John Hannan of Irish extraction set up a factory next to the Neponset River in Dorchester MA.
